Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or spicy, casings removed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 2 medium potatoes sliced thinly
  • 2 cups kale stems removed and chopped
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes optional
  • salt to taste
  • pepper to taste

Method
 

Cooking the Soup
  1. In a large pot, cook the Italian sausage over medium heat until browned, breaking it apart with a spoon.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
  4. Stir in the chopped kale and heavy cream, and cook for an additional 5 minutes.
  5. Season with red pepper flakes, salt, and pepper to taste. Serve hot.
