  • 4 cups yellow squash, sliced about 2 medium squash
  • 1 cup onion, chopped yellow or white onion
  • 1 cup cheddar cheese, shredded for topping
  • 1 cup milk whole or 2%
  • 2 large eggs
  • 1 cup bread crumbs for texture
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sliced yellow squash, chopped onion, milk, eggs, salt, pepper, and garlic powder.
  3. Mix well until all ingredients are combined.
  4. Fold in the bread crumbs and half of the cheddar cheese.
Baking
  1. Pour the mixture into a greased casserole dish.
  2. Sprinkle the remaining cheddar cheese on top.
  3. Bake in the preheated oven for 30 minutes, or until the top is golden brown and the casserole is set.
