Salad Ingredients
  • 1 head romaine lettuce washed and torn into pieces
  • 4 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Salad
  1. In a skillet over medium heat, cook the bacon until crispy. Remove and crumble, leaving the drippings in the skillet.
  2. In the same skillet, add olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Stir to combine and heat through.
  3. Add the torn romaine lettuce to the skillet and toss gently until wilted, about 1-2 minutes.
  4. Transfer the wilted lettuce to a mixing bowl and add the cherry tomatoes, red onion, and crumbled bacon. Toss to combine.
  5. Serve immediately on a serving platter.
