Ingredients
  

Brisket
  • 4 pounds beef brisket trimmed
Rub
  • 2 tablespoons paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper optional for heat
  • 1 tablespoon salt
Wood Pellets
  • 2 cups hickory wood pellets

Method
 

Preparation
  1. Preheat the Traeger smoker to 225°F (107°C).
  2. In a bowl, mix together all the rub ingredients until well combined.
  3. Generously apply the rub to the brisket, ensuring it is evenly coated. Let it sit at room temperature for 30 minutes.
Smoking
  1. Place the brisket on the grill grates, fat side up, and add the hickory wood pellets to the hopper.
  2. Smoke the brisket for about 5 hours or until the internal temperature reaches 195°F (90°C).
  3. Wrap the brisket in aluminum foil and let it rest for at least 30 minutes before slicing.
Serving
  1. Slice the brisket against the grain and serve with your favorite barbecue sauce.
