  • 10 oz tomatillos husked and rinsed
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 medium jalapeño seeded and chopped
  • 1/2 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt to taste

Method
 

Preparation
  1. Preheat a skillet over medium heat. Add the tomatillos and cook until they are slightly charred and softened, about 5-7 minutes.
  2. Remove the tomatillos from the skillet and let them cool slightly.
  3. In a blender, combine the charred tomatillos, onion, garlic, jalapeño, cilantro, lime juice, and salt.
  4. Blend until smooth or to your desired consistency.
  5. Taste and adjust seasoning if necessary.
  6. Transfer the salsa to a mixing bowl and refrigerate for at least 30 minutes to allow flavors to meld.
