Method
Prepare the Meat
- Preheat the oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the taco seasoning and follow package instructions, usually adding water and simmering for a few minutes.
Assemble the Casserole
- In a baking dish, layer two tortillas on the bottom.
- Spread half of the cooked meat mixture over the tortillas.
- Add half of the black beans, corn, and salsa, then sprinkle with one cup of cheese.
- Repeat the layers with the remaining tortillas, meat, beans, corn, salsa, and cheese.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
- Let the casserole cool for a few minutes before slicing. Serve with sour cream and garnish with green onions.
