Ingredients
  

Meat and Tortillas
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 4 large flour tortillas
Vegetables and Toppings
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup salsa
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for serving
  • 1 cup chopped green onions for garnish

Method
 

Prepare the Meat
  1. Preheat the oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the taco seasoning and follow package instructions, usually adding water and simmering for a few minutes.
Assemble the Casserole
  1. In a baking dish, layer two tortillas on the bottom.
  2. Spread half of the cooked meat mixture over the tortillas.
  3. Add half of the black beans, corn, and salsa, then sprinkle with one cup of cheese.
  4. Repeat the layers with the remaining tortillas, meat, beans, corn, salsa, and cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Let the casserole cool for a few minutes before slicing. Serve with sour cream and garnish with green onions.
