Prepare the Filling

- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
Assemble the Casserole
- In a baking dish, layer half of the tortillas on the bottom.
- Spread half of the beef mixture over the tortillas, then sprinkle with half of the cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
- Let the casserole cool for a few minutes before serving. Top with sour cream, lettuce, tomatoes, and jalapeños as desired.
