Ingredients

Velvet Sweet Potato Base
  • 4 lbs sweet potatoes roasted whole for maximum natural sweetness
  • 1/2 cup unsalted butter melted
  • 1/3 cup pure maple syrup adds rich caramel depth
  • 1/3 cup heavy cream
  • 2 large eggs lightly beaten
  • 1.5 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg freshly grated preferred
  • 1/2 tsp fine sea salt balances the sweetness
Candied Brown Sugar Pecan Streusel
  • 1.5 cups pecan halves roughly chopped for texture
  • 3/4 cup dark brown sugar packed
  • 1/2 cup all-purpose flour gives streusel its buttery crumble
  • 6 tbsp unsalted butter melted
  • 1/2 tsp ground cinnamon
  • 1/4 tsp flaky sea salt

Method

Step 1: Roast the Sweet Potatoes to Sweet Perfection
  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes all over with a fork, place on a baking sheet lined with foil, and bake for 45 to 55 minutes until completely tender when pierced with a knife. Allow to cool for 10 minutes, then easily peel and discard the skins.
Step 2: Whip the Silky Sweet Potato Filling
  1. Reduce oven temperature to 350°F (175°C). Grease a 9x13-inch (or large oval ceramic) baking dish with butter.
  2. In a large mixing bowl, combine warm roasted sweet potato flesh, melted butter, pure maple syrup, heavy cream, beaten eggs, vanilla extract, cinnamon, nutmeg, and sea salt. Whip with a hand mixer on medium speed for 2 minutes until light, fluffy, and completely lump-free. Spread evenly into prepared baking dish.
Step 3: Toss the Crunchy Pecan Streusel
  1. In a separate medium bowl, stir together chopped pecans, dark brown sugar, flour, cinnamon, and a pinch of salt. Pour in the 6 tablespoons of melted butter and stir with a fork until a fragrant, crumbly, clumpy streusel forms.
Step 4: Layer, Bake to Golden Perfection & Serve
  1. Evenly scatter the brown sugar pecan streusel across the top of the sweet potato base, making sure the entire surface is covered in crunchy pecan clusters.
  2. Bake at 350°F (175°C) for 32 to 35 minutes until the sweet potato edges are puffed and gently bubbling and the pecan streusel is fragrant, deep golden, and crisp. Rest for 10 minutes before serving warm!

Notes

Chef Technique Cue: Roasting sweet potatoes whole in their jackets rather than boiling them is the single biggest secret to a phenomenal casserole. Boiling waterlogs the potatoes and dilutes their flavor, while roasting concentrates their natural sugars into sweet caramel bliss.
