Ingredients
  

Chicken
  • 1 pound boneless chicken breasts cut into bite-sized pieces
Sauce
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
Garnish
  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the chicken pieces with soy sauce, garlic, and ginger. Let marinate for 10 minutes.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add the bell pepper, broccoli, and carrots to the skillet. Stir-fry for another 5 minutes until vegetables are tender.
Add Sauce
  1. Pour in the sweet chili sauce, rice vinegar, and sesame oil. Stir to coat the chicken and vegetables evenly. Cook for an additional 2-3 minutes.
Serve
  1. Garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles.
