Ingredients
  

Dough ingredients
  • 3 cups bread flour
  • 1 cup active sourdough starter
  • 1 cup warm water
  • 1 teaspoon salt
Add-ins
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 tablespoons sesame seeds
Boiling and Topping
  • 1 teaspoon coarse sea salt for boiling

Method
 

Mixing and Kneading
  1. Combine the bread flour, active sourdough starter, warm water, and salt in a mixing bowl.
  2. Knead the dough until smooth and elastic.
  3. Fold in the chopped sun-dried tomatoes and sesame seeds.
Rising and Shaping
  1. Cover and let the dough rise until doubled in size.
  2. Shape the dough into bagels and create a hole in the center of each.
Boiling and Baking
  1. Bring water to a boil in a large pot and add the coarse sea salt.
  2. Boil the bagels in batches until they float, about 1-2 minutes per side.
  3. Remove the bagels and place them on a baking sheet.
  4. Bake in a preheated oven until golden brown.
