Ingredients
  

Vegetables
  • 2 medium green bell peppers diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth
Protein
  • 1 lb ground beef or turkey
Grains
  • 1 cup uncooked rice white or brown
Spices
  • 1 tbsp Italian seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Prepare the ingredients
  1. Dice the green bell peppers and onion, and mince the garlic.
Cook the meat
  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
Add vegetables and broth
  1. Add the diced peppers, onion, and minced garlic to the pot. Sauté for 5 minutes until softened.
  2. Stir in the diced tomatoes and vegetable broth. Bring to a boil.
Add rice and seasonings
  1. Add the uncooked rice, Italian seasoning, salt, and pepper. Reduce heat and simmer for 20 minutes, or until rice is tender.
Serve
  1. Ladle the soup into bowls and enjoy hot.
