Spring Rolls with Peanut Sauce

Ingredients
  

Spring Rolls
  • 8 pieces Rice paper wrappers
  • 1 cup Shredded carrots
  • 1 cup Cucumber, julienned
  • 1 cup Red bell pepper, julienned
  • 1 cup Lettuce leaves Rinsed and dried
  • 1 cup Fresh herbs (mint, cilantro) Chopped
  • 1 cup Cooked vermicelli noodles
Peanut Sauce
  • 1/2 cup Peanut butter Smooth
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 2 tablespoons Water To thin the sauce
  • 1 clove Garlic, minced
  • 1/2 teaspoon Red pepper flakes Optional

Method
 

Prepare the Spring Rolls
  1. Soak rice paper wrappers in warm water for about 10 seconds until pliable.
  2. Lay the wrapper flat on a clean surface.
  3. Place a small amount of each filling (carrots, cucumber, bell pepper, lettuce, herbs, and noodles) in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top.
  5. Repeat with remaining wrappers and filling.
Make the Peanut Sauce
  1. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, and red pepper flakes.
  2. Whisk together until smooth, adding water as needed to reach desired consistency.
Serve
  1. Arrange the spring rolls on a serving platter and serve with peanut sauce on the side.

Notes
