Ingredients
  

Brisket
  • 4 pounds beef brisket trimmed
Rub
  • 2 tablespoons paprika
  • 2 tablespoons brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper optional for heat
Wood Chips
  • 2 cups hickory wood chips soaked in water for 30 minutes

Method
 

Prepare the Brisket
  1. Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.
  2. In a bowl, mix together all the rub ingredients.
  3. Rub the spice mixture all over the brisket, ensuring it is evenly coated. Let it sit at room temperature for 30 minutes.
Prepare the Smoker
  1. Preheat the smoker to 225°F (107°C).
  2. Add the soaked hickory wood chips to the smoker.
Smoke the Brisket
  1. Place the brisket in the smoker, fat side up, and close the lid.
  2. Smoke the brisket for about 6 hours, or until it reaches an internal temperature of 195°F (90°C).
  3. Wrap the brisket in foil and let it rest for at least 30 minutes before slicing.
Serve
  1. Slice the brisket against the grain and serve with your favorite barbecue sides.
