Method
Prepare the Brisket
- Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.
- In a bowl, mix together all the rub ingredients.
- Rub the spice mixture all over the brisket, ensuring it is evenly coated. Let it sit at room temperature for 30 minutes.
Prepare the Smoker
- Preheat the smoker to 225°F (107°C).
- Add the soaked hickory wood chips to the smoker.
Smoke the Brisket
- Place the brisket in the smoker, fat side up, and close the lid.
- Smoke the brisket for about 6 hours, or until it reaches an internal temperature of 195°F (90°C).
- Wrap the brisket in foil and let it rest for at least 30 minutes before slicing.
Serve
- Slice the brisket against the grain and serve with your favorite barbecue sides.
