Ingredients

  • 1 pound raw shrimp peeled and deveined
Vegetables
  • 1 cup fresh lime juice about 8-10 limes
  • 1 cup diced tomatoes ripe
  • 1 cup diced cucumber peeled
  • 1/2 cup diced red onion
  • 1 medium jalapeño seeded and minced
  • 1/4 cup chopped cilantro
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the shrimp
  1. Chop the raw shrimp into small, bite-sized pieces and place them in a mixing bowl.
  2. Pour the fresh lime juice over the shrimp, ensuring they are fully submerged. Let them marinate for about 15 minutes until they turn opaque.
Mix the ingredients
  1. Add the diced tomatoes, cucumber, red onion, jalapeño, and cilantro to the marinated shrimp.
  2. Season with salt and black pepper, and mix well to combine all ingredients.
Serve
  1. Transfer the ceviche to a serving dish and garnish with additional cilantro if desired. Serve chilled.
