  • 2 sheets puff pastry (thawed, 8½ oz each)
Custard Ingredients
  • cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 bean vanilla (cut in half, seeds scraped out) or use 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • powdered sugar (for dusting)

Method
 

Preparation
  1. Preheat the oven according to puff pastry package instructions.
  2. Roll out the puff pastry and place it in a baking dish.
  3. In a bowl, whisk together granulated sugar, cornstarch, and kosher salt.
  4. In a separate saucepan, heat the warm milk until almost boiling.
  5. Slowly add the warm milk to the sugar mixture while whisking.
  6. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
  7. Remove from heat and add egg yolks and vanilla.
  8. Stir in cold, cubed unsalted butter until melted and smooth.
  9. Pour the custard over the puff pastry.
  10. Bake according to puff pastry instructions or until golden brown.
  11. Allow to cool, then slice into squares and dust with powdered sugar before serving.
