Pollo con Tajadas Honduras

A traditional Honduran dish featuring fried chicken served with fried plantain slices.

Ingredients
  

Chicken Marinade
  • 4 pieces chicken thighs bone-in, skin-on preferred
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup water for marinating
Fried Plantains
  • 2 large ripe plantains peeled and sliced
  • 2 cups vegetable oil for frying

Method
 

Marinate the Chicken
  1. In a bowl, combine chicken thighs, lime juice, garlic powder, cumin, salt, black pepper, and water. Mix well and let marinate for at least 30 minutes.
Cook the Chicken
  1. Heat a frying pan over medium heat and add a little oil. Add the marinated chicken and cook for about 15-20 minutes on each side, or until fully cooked and golden brown.
Fry the Plantains
  1. In another frying pan, heat vegetable oil over medium heat. Fry the sliced plantains until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
Serve
  1. Plate the fried chicken alongside the fried plantains. Enjoy your Pollo con Tajadas!
