Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Basil Pesto
  • 2 cups fresh basil leaves packed
  • 1/2 cup parmesan cheese grated
  • 1/2 cup olive oil extra virgin
  • 1/3 cup pine nuts toasted
  • 2 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
Garnish
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup basil leaves for garnish

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Make Pesto
  1. In a blender, combine basil leaves, parmesan cheese, pine nuts, garlic, salt, and pepper. Blend until smooth.
  2. With the blender running, slowly drizzle in the olive oil until fully incorporated.
Combine
  1. In the pot, combine the drained pasta and pesto. Toss to coat, adding reserved pasta water as needed to reach desired consistency.
  2. Serve immediately, garnished with cherry tomatoes and additional basil leaves.

Notes

For a creamier pesto, add a splash of heavy cream to the pasta before serving.
