Ingredients
  

Pasta
  • 12 oz Pasta (e.g., penne or fettuccine) Use whole wheat for a healthier option.
Vegetables
  • 1 cup Bell peppers (red, yellow, green) Sliced.
  • 1 cup Zucchini Sliced.
  • 1 cup Cherry tomatoes Halved.
  • 1 cup Broccoli florets
  • 1 cup Carrots Julienned.
Sauce
  • 3 tbsp Olive oil Extra virgin.
  • 2 cloves Garlic Minced.
  • 1 tsp Salt To taste.
  • 1/2 tsp Black pepper Freshly ground.
  • 1/2 cup Parmesan cheese Grated, for serving.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the bell peppers, zucchini, broccoli, and carrots. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
  3. Stir in the cherry tomatoes and cook for an additional 2 minutes.
Combine and Serve
  1. Add the cooked pasta to the skillet with the vegetables. Toss to combine and season with salt and black pepper.
  2. Serve hot, topped with grated Parmesan cheese.
