Ingredients
  

Chicken and Vegetables
  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 2 cups mixed vegetables such as carrots, peas, and bell peppers
  • 1 cup chicken broth low sodium
  • 1 tbsp olive oil for sautéing
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 cup uncooked rice preferably long grain

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add the chicken pieces and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until browned, about 5-7 minutes.
  2. Add the mixed vegetables and cook for another 3-4 minutes until they start to soften.
  3. Stir in the rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and has absorbed the liquid.
  4. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.
