Ingredients
  

Quinoa Salad
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 lemon juice
  • 1 teaspoon salt
  • 1 teaspoon pepper
Lentil Soup
  • 1 cup lentils rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups spinach fresh
Energy Bites
  • 1 cup oats rolled
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/4 cup chia seeds
  • 1/4 cup dark chocolate chips
  • 1 teaspoon vanilla extract

Method
 

Quinoa Salad
  1. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  2. Fluff quinoa with a fork and let it cool.
  3. In a large bowl, combine cooled quinoa, tomatoes, cucumber, red onion, and feta.
  4. Drizzle with olive oil and lemon juice, season with salt and pepper, and toss to combine.
Lentil Soup
  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Add lentils, vegetable broth, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Stir in spinach and cook until wilted, about 5 minutes.
Energy Bites
  1. In a bowl, mix oats, peanut butter, honey, chia seeds, chocolate chips, and vanilla until combined.
  2. Roll the mixture into small balls and refrigerate for at least 30 minutes.
