Ingredients
  

Cucumbers
  • 4 medium cucumbers sliced thinly
Marinade
  • 1 cup rice vinegar
  • 1 tablespoon sugar adjust to taste
  • 1 teaspoon salt
  • 1 teaspoon soy sauce optional
  • 1 teaspoon sesame oil optional
  • 1 teaspoon red pepper flakes optional for heat
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill or dill weed

Method
 

Prepare Cucumbers
  1. Wash and slice the cucumbers thinly. Place them in a mixing bowl.
Make Marinade
  1. In a separate bowl, whisk together the rice vinegar, sugar, salt, soy sauce, sesame oil, red pepper flakes, minced garlic, and dill until well combined.
Combine and Marinate
  1. Pour the marinade over the sliced cucumbers and toss to coat evenly.
  2. Transfer the cucumbers and marinade to a jar or container. Seal and refrigerate for at least 45 minutes to an hour before serving.
