Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Filling
  • 2 large eggs
  • 1 cup sweetened condensed milk
  • 1/2 cup fresh key lime juice about 4-6 limes
  • 1 teaspoon lime zest
  • 1/4 teaspoon baking powder
Topping
  • powdered sugar for dusting

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, salt, and softened butter. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x9 inch baking pan. Bake for 15 minutes until lightly golden.
Prepare the filling
  1. In another bowl, whisk together the eggs, sweetened condensed milk, key lime juice, lime zest, and baking powder until smooth.
  2. Pour the filling over the baked crust and return to the oven. Bake for an additional 10-15 minutes until set.
Cool and serve
  1. Allow the bars to cool completely in the pan. Dust with powdered sugar before cutting into squares.

Notes

For best flavor, use fresh key limes if available. Adjust sweetness by adding more or less sugar to the filling as desired.
