Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup carrots sliced
  • 1 cup cherry tomatoes halved
  • 1 cup broccoli florets
Sauce
  • 3 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1/4 cup parmesan cheese grated, optional

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the bell pepper, zucchini, carrots, and broccoli. Cook for about 5-7 minutes until the vegetables are tender.
  3. Stir in the cherry tomatoes and cook for an additional 2-3 minutes.
Combine and Serve
  1. Add the cooked pasta to the skillet with the vegetables. Toss to combine, adding salt and pepper to taste.
  2. Serve hot, topped with grated parmesan cheese if desired.
