Instant Pot Refried Beans

Ingredients
  

Beans
  • 1 cup dried pinto beans rinsed and sorted
  • 4 cups water
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon cumin optional
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil for sautéing

Method
 

Cooking the Beans
  1. Set the Instant Pot to sauté mode. Add olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Add rinsed pinto beans, water, salt, and cumin (if using) to the pot. Stir to combine.
  4. Close the lid and set the Instant Pot to manual high pressure for 30 minutes.
  5. Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then quick release any remaining pressure.
  6. Open the lid and use a potato masher or immersion blender to mash the beans to your desired consistency.
  7. Adjust seasoning as needed and serve warm.

Notes

These refried beans can be stored in the refrigerator for up to a week or frozen for longer storage.
