Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 1 cup vegetable broth
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt adjust to taste
  • 1 tablespoon olive oil for sautéing
  • 1/2 cup frozen peas optional
  • 1/2 cup corn optional
  • 1 lime juice for serving
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Cooking the Rice
  1. Turn on the Instant Pot and select the 'Sauté' function. Add olive oil and let it heat up.
  2. Add diced onion and sauté for 2-3 minutes until translucent.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add the rinsed rice, vegetable broth, diced tomato, cumin, chili powder, and salt. Stir to combine.
  5. Close the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high for 6 minutes.
  6. Once cooking is complete, allow for a natural pressure release for 10 minutes, then quick release any remaining pressure.
  7. If using, stir in frozen peas and corn, and let sit for a few minutes to heat through.
  8. Fluff the rice with a fork, and serve with lime juice and chopped cilantro on top.
