Ingredients
  

Base Ingredients
  • 2 tablespoons olive oil extra virgin
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 6 cups fresh tomatoes chopped or crushed
Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
Finishing Touches
  • 1/4 cup fresh basil chopped
  • 1/4 cup parmesan cheese grated, optional

Method
 

Cooking the Sauce
  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chopped tomatoes, salt, pepper, sugar, oregano, basil, and bay leaf.
  5. Bring the mixture to a simmer and reduce the heat to low.
  6. Let the sauce simmer uncovered for about 30 minutes, stirring occasionally.
  7. Remove the bay leaf and stir in the fresh basil before serving.
  8. If desired, sprinkle with grated parmesan cheese before serving.
