  • 2 cups Canned Whole Tomatoes Preferably San Marzano
  • 2 tablespoons Olive Oil Extra virgin
  • 4 cloves Garlic Minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Sugar To balance acidity
  • 1 teaspoon Salt To taste
  • 1/4 teaspoon Black Pepper Freshly ground
  • 1/4 cup Fresh Basil Chopped, for garnish

Method
 

Cooking the Sauce
  1. Heat olive oil in a saucepan over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the canned tomatoes, breaking them up with a spoon.
  4. Stir in oregano, basil, sugar, salt, and pepper.
  5. Bring to a simmer and reduce heat to low.
  6. Let the sauce simmer for about 30 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary.
  8. Remove from heat and stir in fresh basil before serving.
