  • 85 g milk lukewarm
  • 60 g water lukewarm
  • 6 g active dry yeast
  • 5 g honey
  • 25 g butter melted
  • 20 g white sugar
  • 250 g AP flour
  • 5 g salt
  • 140 g butter for tourrage
  • 1 large egg yolk
  • 2 tbsp milk and/or cream

Method
 

Croissant Preparation
  1. In a bowl, combine lukewarm milk, water, active dry yeast, and honey. Let sit for about 5-10 minutes until frothy.
  2. In another bowl, mix melted butter, sugar, flour, and salt.
  3. Add the yeast mixture to the dry mix and combine until a dough forms.
  4. Knead the dough until smooth and elastic, then let it rest for 30 minutes.
  5. Roll out the dough and incorporate the 140 g of butter for tourrage by folding and rolling.
  6. Shape the dough into croissants and place on a baking sheet.
  7. Allow to proof until doubled in size.
  8. Preheat the oven and bake for 25 minutes until golden brown.
  9. Brush with egg wash made from the egg yolk and milk/cream before baking.
