Method
Prepare the apples
- Wash and quarter the apples, removing any seeds and stems.
Cook the cider
- In a large pot, combine the quartered apples and water. Bring to a boil over high heat.
- Reduce heat and let simmer for about 2 hours, mashing the apples with a wooden spoon occasionally.
Strain and season
- After 2 hours, strain the mixture through a fine strainer or cheesecloth into a large bowl.
- Add the cinnamon, cloves, star anise, ginger, and brown sugar to the strained liquid. Stir well and simmer for an additional 30 minutes.
Serve
- Serve warm, garnished with additional cinnamon sticks if desired.
