  • 1 cup Whole wheat flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
Wet Ingredients
  • 1 cup Pumpkin puree Canned or homemade
  • 1/2 cup Honey or maple syrup For sweetness
  • 1/4 cup Unsweetened applesauce For moisture
  • 2 large Eggs Beaten
  • 1 teaspoon Vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the dry ingredients: whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the wet ingredients: pumpkin puree, honey (or maple syrup), applesauce, beaten eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
