Method
Prepare the Oven and Pan
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
Mix Dry Ingredients
- In a mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Combine Wet Ingredients
- In another bowl, mix the pumpkin puree, honey, applesauce, eggs, and vanilla extract until well combined.
Combine Mixtures
- Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in walnuts or chocolate chips.
Bake
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
