Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup pumpkin puree canned or homemade
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
Optional Add-ins
  • 1/2 cup walnuts chopped
  • 1/2 cup chocolate chips dark or semi-sweet

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Combine Wet Ingredients
  1. In another bowl, mix the pumpkin puree, honey, applesauce, eggs, and vanilla extract until well combined.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in walnuts or chocolate chips.
Bake
  1. Pour the batter into the prepared loaf pan and smooth the top. Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
