Ingredients
  

For the Skirt Steak
  • 2 pounds skirt steak trimmed
  • 1/4 cup olive oil for marinade
  • 3 tablespoons red wine vinegar
  • 4 cloves garlic minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Chimichurri Sauce
  • 1 cup fresh parsley chopped
  • 1/4 cup fresh oregano chopped
  • 3 cloves garlic minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon red pepper flakes optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, smoked paprika, cumin, salt, and black pepper. Mix well.
Marinate the Steak
  1. Place the skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight.
Prepare the Chimichurri Sauce
  1. In a bowl, combine chopped parsley, oregano, minced garlic, olive oil, red wine vinegar, red pepper flakes, salt, and black pepper. Stir until well combined and set aside.
Grill the Steak
  1. Preheat the grill to high heat. Remove the steak from the marinade and let excess marinade drip off. Grill the steak for about 3-4 minutes per side for medium-rare, or until desired doneness is reached. Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.
Rest and Serve
  1. Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain. Serve with chimichurri sauce drizzled on top.

Notes

For best results, allow the steak to marinate overnight. Adjust the spice level of the chimichurri sauce according to your taste.
