- Cut the tops off the large onions and remove the insides to create shells.
- Heat olive oil in a large skillet over medium heat and sauté the diced onion and garlic until translucent.
- Add ground chuck to the skillet and cook until browned. Season with sea salt and black pepper.
- Stir in crushed tomatoes, arborio rice, parsley, mint, oregano, feta cheese, tomato paste, and onion broth. Mix thoroughly.
- Fill each onion shell with the mixture and place in a baking dish.
- Cover the dish with foil and bake for 120 minutes, or until the rice is cooked and the onions are tender.
- Serve warm and season with additional salt and pepper if desired.
