  • 4 tablespoons extra virgin olive oil
  • 1 large onion finely diced
  • 5 cloves garlic minced
  • 1.5 pounds ground chuck
  • 1 teaspoon fine sea salt
  • 0.5 teaspoon black pepper
  • 1 14-ounce can crushed plum tomatoes
  • 1 cup arborio rice rinsed until water runs clear
  • 0.25 cup flat-leaf Italian parsley minced
  • 0.25 cup fresh mint chopped
  • 2 teaspoons dried oregano
  • 0.5 cup crumbled feta cheese
  • 1 6-ounce can tomato paste
  • 3 cups saved onion broth
  • 1 cup boiled onion centers finely diced
  • salt to taste
  • pepper to taste

Method
 

Cooking Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cut the tops off the large onions and remove the insides to create shells.
  3. Heat olive oil in a large skillet over medium heat and sauté the diced onion and garlic until translucent.
  4. Add ground chuck to the skillet and cook until browned. Season with sea salt and black pepper.
  5. Stir in crushed tomatoes, arborio rice, parsley, mint, oregano, feta cheese, tomato paste, and onion broth. Mix thoroughly.
  6. Fill each onion shell with the mixture and place in a baking dish.
  7. Cover the dish with foil and bake for 120 minutes, or until the rice is cooked and the onions are tender.
  8. Serve warm and season with additional salt and pepper if desired.
