  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • royal icing or easy cookie glaze icing
  • gel food coloring
  • sanding sugar sprinkles
  • mini marshmallows halved

Method
 

  1. Combine flour, baking powder, and salt in a bowl.
  2. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
  8. Cut out desired shapes and place them on a baking sheet.
  9. Bake for 10-12 minutes until lightly golden.
  10. Allow cookies to cool before decorating with royal icing, gel food coloring, sanding sugar sprinkles, and mini marshmallows.
