For the Pumpkin Soup
  • 2 cups Pumpkin Puree canned or homemade
  • 1 cup Vegetable Broth
  • 1 cup Coconut Milk for creaminess
  • 1 tablespoon Olive Oil for sautéing
  • 1 teaspoon Garlic minced
  • 1 teaspoon Ginger grated
  • 1 teaspoon Cinnamon for warmth
For the Roasted Brussels Sprouts
  • 1 pound Brussels Sprouts trimmed and halved
  • 2 tablespoons Olive Oil
  • 1 teaspoon Balsamic Vinegar

Method
 

Pumpkin Soup Preparation
  1. In a large pot, heat olive oil over medium heat. Add minced garlic and grated ginger, sauté for 2 minutes until fragrant.
  2. Stir in the pumpkin puree, vegetable broth, and coconut milk. Add cinnamon, salt, and pepper. Bring to a simmer and cook for 20 minutes.
  3. Blend the soup until smooth using an immersion blender or a regular blender. Adjust seasoning if needed.
Roasted Brussels Sprouts Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss Brussels sprouts with olive oil, balsamic vinegar, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes, stirring halfway through, until golden and crispy.
