Ingredients
  

  • 7 oz spinach
  • 1 each red delicious apple thinly sliced
  • 4.5 oz gorgonzola at room temperature
  • 1/2 each pomegranate arils removed
  • 5.2 oz streaky bacon or pancetta strips
  • 5 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 cup walnut halves
  • 3 tbsp sugar
  • 1/4 tsp chili flakes
  • 1/4 tsp paprika
  • 1 oz butter
  • salt
  • pepper

Method
 

  1. Cook the streaky bacon or pancetta strips until crisp. Remove and allow to drain on paper towels.
  2. In a large bowl, combine the spinach, sliced apple, gorgonzola, and pomegranate arils.
  3. In a small saucepan, melt the butter and add the walnut halves, sugar, chili flakes, and paprika. Cook until the walnuts are toasted and caramelized.
  4. Pour the caramelized walnuts over the salad mixture.
  5. Drizzle olive oil and red wine vinegar over the salad. Season with salt and pepper to taste.
  6. Toss the salad gently to combine all ingredients, and serve immediately.
