  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup small pasta (e.g., ditalini or elbow macaroni)
  • 2 tsp Italian seasoning
  • Salt & pepper to taste

Method
 

  1. In a large pot over medium heat, drizzle olive oil. Sauté onion, carrots, and celery until softened (about 5 minutes).
  2. Add minced garlic and zucchini; cook for an additional 2 minutes until fragrant.
  3. Pour in canned tomatoes with juices and vegetable broth. Stir well.
  4. Add kidney beans and Italian seasoning; let simmer for about 10 minutes.
  5. Stir in pasta and cook according to package instructions until al dente (about 8 minutes).
  6. Season with salt and pepper to taste before serving hot.
