Ingredients
  

Strawberry Filling
  • 2 cups diced strawberries
  • 6 tablespoons granulated sugar
  • 1.5 tablespoons cornstarch
  • 1.5 tablespoons warm water
Muffin Batter
  • 1.67 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter melted and slightly cooled
  • 2 large egg whites
  • 0.25 cup sour cream or plain yogurt
  • 0.75 cup whole milk
  • 2 teaspoons vanilla bean paste or extract
Whipped Cream Filling
  • 1.5 cups cold heavy cream or heavy whipping cream
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla bean paste or extract
  • 0.5 cup reserved strawberry filling
  • optional garnish strawberry slices and fresh mint

Method
 

Preparing the Muffins
  1. Prepare strawberry filling by mixing diced strawberries with 6 tablespoons sugar, cornstarch, and warm water. Set aside to macerate.
  2. Preheat oven to 375°F (190°C).
  3. In a mixing bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  4. In another bowl, cream together 1 cup granulated sugar and melted butter. Add egg whites, sour cream, milk, and vanilla, then mix until combined.
  5. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  6. Fill muffin tins with batter halfway, then add a spoonful of strawberry filling, and top with more batter until three-quarters full.
  7. Bake in preheated oven for 22 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool before making whipped cream filling.
Making Whipped Cream Filling
  1. Whip cold heavy cream with 3 tablespoons sugar and 1 teaspoon vanilla until soft peaks form.
  2. Cut a slit in each muffin and pipe in whipped cream filling.
  3. Garnish with strawberry slices and fresh mint if desired.
