Dressing
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon Italian seasoning
  • salt to taste
  • freshly ground black pepper to taste
Salad
  • 6 oz arugula and baby spinach mix or lettuce
  • 4 oz sun-dried tomatoes in olive oil, drained, chopped
  • 4 oz artichokes chopped
  • 4 oz red cherry tomatoes sliced in half
  • 1/3 cup red onion sliced
  • 1/3 cup Parmesan cheese shaved or grated
  • 1/3 cup pine nuts

Dressing Preparation
  1. In a large bowl, whisk together olive oil, Dijon mustard, red wine vinegar, honey, Italian seasoning, salt, and black pepper.
Salad Assembly
  1. Add arugula and baby spinach mix to the dressing and toss gently to combine.
  2. Add sun-dried tomatoes, artichokes, red cherry tomatoes, red onion, Parmesan cheese, and pine nuts to the salad.
  3. Toss all ingredients together until everything is well coated with the dressing.
