Ingredients
  

Potatoes and Pesto
  • 1 lb Baby potatoes (diced)
  • 2 cups Arugula (fresh)
  • 1 cup Cherry tomatoes (halved)
  • 1 small Red onion (thinly sliced)
  • 1/4 cup Pine nuts (or walnuts)
  • 1/2 cup Parmesan cheese (grated)
  • 1/2 cup Olive oil
  • 1-2 cloves Garlic
  • 2 tbsp Lemon juice

Method
 

Preparation
  1. Boil the baby potatoes until tender, about 12 minutes, then drain and let cool.
  2. In a food processor, combine arugula, pine nuts (or walnuts), parmesan cheese, garlic, and lemon juice. Blend while slowly adding olive oil until smooth.
  3. In a large bowl, combine the cooled potatoes, arugula, cherry tomatoes, and red onion.
  4. Toss the mixture with the arugula pesto until evenly coated.
