Ingredients
  

Rice
  • 1 cup arborio rice
Mushrooms
  • 2 cups sliced mushrooms such as cremini or button
Broth
  • 4 cups vegetable broth low-sodium preferred
Onion and Garlic
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
Olive Oil
  • 2 tablespoons olive oil for sautéing
Nutritional Yeast
  • 1/4 cup nutritional yeast for a cheesy flavor
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried thyme

Method
 

Prepare the Broth
  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
Sauté Vegetables
  1. In a large saucepan, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the sliced mushrooms and cook until they are browned and tender.
Cook the Rice
  1. Stir in the arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
  2. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding more broth.
  3. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
Finish the Risotto
  1. Stir in the nutritional yeast, salt, pepper, and thyme. Mix well and adjust seasoning to taste.
  2. Remove from heat and let it sit for a couple of minutes before serving.
