  • 2 cups cucumber diced
  • 2 cups watermelon diced and seeded
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1 tablespoon fresh mint chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional

Method
 

Prepare the Ingredients
  1. Dice the cucumber and watermelon into bite-sized pieces.
  2. Thinly slice the red onion and chop the fresh mint.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
Combine the Salad
  1. In a large mixing bowl, combine the diced cucumber, watermelon, red onion, feta cheese, and mint.
