Cucumber Tea Sandwiches

Ingredients
  

Sandwich Filling
  • 1 cup cream cheese softened
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • 1 large cucumber thinly sliced
Bread
  • 8 slices white bread or whole grain

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the softened cream cheese, chopped dill, and lemon juice. Mix until smooth.
Assemble the Sandwiches
  1. Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
  2. Layer the cucumber slices on top of the cream cheese on half of the slices.
  3. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
Cut and Serve
  1. Trim the crusts off the sandwiches and cut them into quarters or triangles.
  2. Arrange on a platter and serve immediately or refrigerate until serving.
