Ingredients
  

Sandwich Base
  • 8 slices white bread or whole grain
Cucumber Filling
  • 1 large cucumber thinly sliced
  • 4 tablespoons cream cheese softened
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon lemon juice
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, salt, and black pepper. Mix until smooth.
Assemble the Sandwiches
  1. Spread a layer of the cream cheese mixture on one side of each slice of bread.
  2. Layer the cucumber slices evenly on half of the bread slices.
  3. Top with the remaining bread slices, cream cheese side down, to form sandwiches.
Cut and Serve
  1. Trim the crusts off the sandwiches and cut them into quarters or triangles. Arrange on a serving platter.
