Ingredients

  • 2 large cucumbers sliced thinly
  • 1 cup carrots julienned
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
Dressing Ingredients
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic minced
  • 1/2 teaspoon red pepper flakes optional

Method
 

Prepare the Vegetables
  1. In a mixing bowl, combine the sliced cucumbers, julienned carrots, sliced red onion, and chopped cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, minced garlic, and red pepper flakes until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until everything is evenly coated. Serve immediately or chill for 30 minutes before serving for enhanced flavor.
