Ingredients
  

  • 4 pieces Boneless Skinless Chicken Breasts (or thighs)
  • Salt generously sprinkle on chicken
  • Pepper generously sprinkle on chicken
  • 1 cup Chicken Broth
  • 1/2 cup Sundried Tomatoes jarred in oil
  • 1 cup Heavy Cream
  • 3 cloves Garlic minced
  • 1 teaspoon Thyme (or Oregano)
  • 1/2 to 1 teaspoon Red Pepper Flakes optional
  • 1/2 cup Parmesan Cheese freshly grated
  • 1 Tablespoon Cornstarch
  • 8 leaves Fresh Basil cut into ribbons

Method
 

  1. Place the chicken breasts (or thighs) in the crockpot and season with salt and pepper.
  2. Add chicken broth, sundried tomatoes, heavy cream, minced garlic, and thyme (or oregano) to the crockpot.
  3. If desired, add red pepper flakes.
  4. Cook on low for 5 to 6 hours or until chicken is tender.
  5. Once cooked, remove the chicken and whisk in cornstarch to thicken the sauce.
  6. Return the chicken to the crockpot and mix with the sauce.
  7. Serve garnished with fresh basil and topped with Parmesan cheese.
