Ingredients
  

Chickpeas and Squash
  • 1 can chickpeas, drained and rinsed (15 oz)
  • 1 lb delicata or acorn squash
  • 3 tbsp avocado oil or neutral high heat oil
  • 1 tbsp cornstarch
  • 1.5 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp Chinese Five Spice
  • 2 tsp fresh thyme
  • 0.5 tsp fennel seeds
  • 2 tsp maple syrup
  • Kosher salt to taste
Salad & Dressing
  • 1 lb brussels sprouts, thinly sliced
  • 0.5 medium red onion, thinly sliced
  • 1/4 cup tahini
  • 1 tbsp maple syrup or more
  • 1 clove garlic, grated
  • 1 tsp Dijon mustard
  • 1/4 cup cilantro, finely minced
  • 1 Juice and zest lime
  • 3–4 tbsp cold water
  • Cooked rice or quinoa for serving

Method
 

Roasting and Salad Preparation
  1. Preheat the oven and prepare a baking sheet.
  2. Cut the squash into slices and toss with avocado oil, cornstarch, garlic powder, ground coriander, Chinese Five Spice, fresh thyme, fennel seeds, maple syrup, and salt.
  3. Spread the squash on the baking sheet and roast until tender and slightly crispy.
  4. In a large bowl, combine the sliced brussels sprouts, red onion, and roasted squash.
Dressing Preparation
  1. In a separate bowl, whisk together tahini, maple syrup, grated garlic, Dijon mustard, minced cilantro, lime juice, lime zest, and cold water to create the dressing.
  2. Pour the dressing over the salad and toss to combine.
Serving
  1. Serve the salad with cooked rice or quinoa.
