Hollow & Dual-Bake Crisping
- Preheat oven & hollow: Preheat oven to 450°F (230°C). Line a rimmed baking sheet with parchment. Halve the baked potatoes lengthwise. Gently scoop out the potato flesh leaving a sturdy 1/4-inch border around the skin.
- Season & crisp both sides: Whisk melted butter, olive oil, garlic powder, paprika, salt, and black pepper. Brush skins thoroughly inside and out. Bake cut-side down for 10 minutes, flip cut-side up and bake for another 8-10 minutes until deeply golden and blistered.
Layer Cheese & Broil to Molten Perfection
- Fill & melt: Fill hollowed shells evenly with shredded cheddar and half the beef bacon bits. Return to oven for 4-5 minutes until cheese is molten and bubbling.
- Top & garnish: Rest 2 minutes. Crown each hot potato skin with a cool dollop of sour cream, remaining crispy beef bacon, and a generous scatter of fresh chives and parsley. Serve immediately with ranch dip!
