Ingredients
  

Wet Ingredients
  • 1 cup grated zucchini excess moisture squeezed out
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup chocolate chips semi-sweet or dark

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the grated zucchini, vegetable oil, sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, mix the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
