Ingredients
  

Filling
  • 4 cups fresh cherries pitted and halved
  • 1 cup granulated sugar adjust to taste
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside.
Make the Topping
  1. In another mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until just combined.
Assemble and Bake
  1. Pour the cherry mixture into a greased baking dish. Spoon the topping over the cherries evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For a twist, you can add a pinch of cinnamon to the cherry filling.
